So I have a few guitar bodies without necks.
Or, more accurately, I have two guitars that have never had strings, and I don't want to put strings on them if I'm going to have to work on re-wiring pickups.

So I plugged them into the amp, turned up the volume, and then tapped/touched the pickup with my fingers. If it changed the sound of the hum, that meant current was flowing through the pickup. In every case, the pickup that should have been on in the correct 5-way switch position was on. Using this method, I also learned that the position 2 (bridge + middle) tapped the humbucker bridge into a single coil.

That is, if the buzzing/cycle change when I touched a pickup pole is a valid test.

Did I do it right, or did I just waste my time?

That can work but it's difficult to hear properly, especially if the difference is slight or the room is noisy. The more common method to check pups for function is to lightly tap the coils (or cover) with a small screwdriver. I routinely do this with every guitar that I work on as a quick check.
