I recently bought this nice little Westone Concord 1 which I love.

I plan on doing as little as possible to it and keeping it as stock as I can.

But I would like to thicken up the middle setting on the switch.

I have done this with Teles and 3 and 4 way in-line switches, but I would like to ask if anyone knows if this can be done with the toggle switch that this guitar has.

Anyone have any ideas how I can simply do this, i.e. wire the switch so that when both pickups are on, they are in series rather than parallel?

I know that some guitars like Danelectros are wired in this way, and the middle setting is a big part of their tone.

As I commented on your other post, really nice guitar Sollophonic!

I have a '56 reissue U2 Danelectro, and yes, the centre position is by far the best setting of the three. The output is cumulative, which is good because the individual output of the lipstick pups is surprisingly low:
Neck=3.56K Bridge=3.57K Centre=7.3K !!
You may be on to something with this mod. My Concord II (3 pups) also measures quite low output at 4.59K 4.59K 4.58K. If yours is in that same range, then this should make a huge difference in the centre position.
